We were in a hurry, starving, and exhausted. So… I turned to comfort food.
Creamy Pesto Pasta
1/2 cup Good Quality Pesto
12 oz Pasta, Cooked al Dente and reserve some pasta water
1 T Butter
1/4 T Flour
1 Garlic Clove, minced
1/2 cup Heavy Cream
1/2 cup Mozzarella Cheese
1/4 cup Asiago or Parmesan for garnish
Melt butter in a sauce pan with the garlic. Stir in flour then whisk in reserved cream and some pasta water. You want to make a thin “gravy.” Add pasta and cheese. Stir until cheese is melted. Serve topped with cheese and fresh herbs.
