Cranberry Lemon Bundt


I am a pack rat. I collect baking pans and supplies that I don’t need and have to find excuses to use. I love them. I love to look at them, maybe I need to go to Baking Supplies Hoarders Anonymous.

Cranberry Lemon Bundt

1 2/3 c sugar
1/2 c applesauce
Zest from 2 lemons
1 stick unsalted butter
3 eggs
2 t vanilla extract
3 c flour
1 t salt
1 T baking powder
3/4 c buttermilk
2 cups fresh cranberries

Preheat oven to 350 F. Grease and flour a 9 c bundt pan. Cream butter, applesauce, and sugar. Add in vanilla and one egg at a time. Sift flour, salt, baking powder together. Add in a third of the flour, then a third of the buttermilk and continue switching off until they are both gone. Fold in cranberries. Bake for 1 hour or until toothpick inserted in center comes out clean. Let cool for about 10 minutes before removing from pan.

Dust with powdered sugar or make a lemon glaze like I did.
