A simple marinade perfect for grilling.
My husband loves fish sandwiches, I don’t. So we compromise and I have my salmon and he has a fish sandwich.
2 tilapia fillets
1/2 c flour
1 t baking powder
1/4 c Buttermilk
Salt and pepper
Heat oil in a skillet. Pat fillet a dry and set aside. Combine all ingredients but fish in a shallow bowl. Add whatever seasonings you like. Add water until batter reaches pancake batter consistency. Coat fish and fry for 3-5 minutes on each side.
They may be greasy, bacony, and cheese laden …. but they are divine.
Yum! Nothing better than eggs and steak for breakfast.
Short Ribs and Polenta
4-6 short ribs
1 T oil
1 c beef stock
1 c Guinness
1 T Dijon mustard
4 sprigs rosemary
Salt and Pepper
Heat small Dutch oven medium high. Add oil and brown short ribs on all sides. Add shallots and brown. Then add carrots. Dump in Guinness and reduce heat, scraping brown bits off sides and bottom. Add beef stock, mustard, and rosemary. Simmer on low for 40 minutes.
Turn sauce into gravy by adding a little corn starch in water and serve over polenta. Top with a little blue cheese.
This makes a great leftover.
Beats the hell out of the store bought stuff. Serve with homemade ice cream and it could be my last meal. The ice cream I made used the yolks… so no waste.
