It has been a while since we had a date night, blame busy work schedule, yard work, a puppy and a whole host of other things. I wasn’t as nice to my husband this time. If he wants to pick safer countries than we are eating things he doesn’t like, like sweet potatoes. Just kidding… well not really. He really doesn’t like sweet potatoes but the original recipe called for mashed pumpkin and well, he would prefer the sweet potatoes and I still get something new.
Wow! I hate huckleberries, but my husband adores them. However, we have found one way I will eat them. This recipe is divine.
Honestly, the name is morbid. My husband told me ‘roasted smashed potatoes’ was not inventive so this is what I came up with.
I guess being sick has put me into a full on grits craving. I have eaten them twice a day now for the past three days.
The picture doesn’t do it justice. When I am sick I want grits with a fried egg. My husband calls me crazy, but I love them. Besides they are super simple.
Buttered Grits and Fried Eggs
1/4 cup grits (high quality love the yellow ones from Whole Foods)
1 cup water
1 T Butter
1/8 t red pepper flakes
Salt and Pepper
1-2 Eggs, over easy
Bring water to a boil in a sauce pan and dump in grits and red pepper flakes. Simmer until thickens. Melt in butter.
In small frying pan fry egg, over easy. Place on top of grits and pop yolk. Stir in and salt and pepper to taste.
My husband saw a picture of this on Stumbleupon and just had to have it. What better way to celebrate the end of the summer than with a burger.
