Happy Cinco de Mayo. I celebrated with this treat my grandmother used to make. She was raised on a mission in Mexico and has passed on some recipes. Even though I was only two when she passed, these recipes bring back lovely memories because my mother cherished them as well.
Normally these were not baked. The tortillas were pan fried, dipped in enchilada sauce and a fried egg is placed on top. However, we were feeding a group. Baking them turned out wonderful.
Baked Egg Enchiladas
6-8 (per person) Homemade Corn Tortillas
Homemade Enchilada Sauce
Onion, chopped and browned
Cilantro and chives for garnish
Layer a tortilla at a time in a ramekin and spread sauce and onions before adding the next tortilla, repeat. On the final tortilla top with an egg. Bake at 350 for about 10 minutes. Top with cheese and broil about 5 minutes or until egg is just cook. Garnish and serve.
