Yum! What can I say, other than caramelized white chocolate is awesome and I am having a hard time making enough to have some to bake with. I keep eating it.
Caramelized White Chocolate Dipped Macadamia Nut Cookies
1 stick unsalted butter, softened
3/4 cups granulated sugar
1/2 cup dark brown sugar
3/4 teaspoons vanilla extract
1 1/2 cups unsifted flour + 2 T for high altitude
1/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cups white chocolate chips
3/4 cups Macadamia nuts, chopped
Preheat oven to 350 F. Cream butter and sugar. Add egg and vanilla. In a separate bowl mix flour, baking soda, and salt. Add to sugar mixture. Fold in chocolate chips and Macademia nuts.
Chill in fridge for 1/2 hour. Bake 10-12 minutes.
Melt caramelized white chocolate in a double broiler and dip cooled cookies. Set on wax paper until hardened.
