Apple Caramel Coffee Cake


1/2 cup oil
1/2 cup unsweetened applesauce
2 eggs beaten
1 tsp vanilla
1 cup milk
1 cup sugar
3 cup flour
3 tsp baking powder
½ tsp salt

1½ cup brown sugar
2 tsp cinnamon

1 apple, peeled and diced
1/4 c flour
1/2 c brown sugar
1/2 c sugar
2 T butter
1/4 c water
1/4 t cinnamon
1/8 t nutmeg
2 T heavy cream

1/4 c chopped walnuts, toasted

1 t heavy cream
2 T powders sugar

Combine oil, eggs, vanilla and milk together. Sift together sugar, flour, baking powder and salt. Combine egg mixture with flour mixture.

Pour half the batter into a 9×13 pan.

In bowl combine brown sugar and cinnamon. Sprinkle half of streusel on top of the batter. Top with remaining batter and then sprinkle the remaining streusel on top.

Bake, uncovered at 350 for 25-30 minutes. Cool completely

In a small sauce pan, saute apples in butter. Combine with water and blend. Pour back into sauce pan and add flour, sugars, and spices. Stir continuously. When mixture starts to bubbly turn down. Stir in heavy cream and remove from heat. Drizzle over cake.

Sprinkle walnuts over the cake.

Combine powdered sugar and heavy cream. If you need the glaze thicker add more sugar, for thinner glaze add more cream. You are looking for an Elmer’s glue consistency. Drizzle over cake.
