Scotch Eggs 2 Ways

Scotch Eggs

4 eggs
1/2 lb country sausage (pork top picture, chicken bottom)
1/4 c flour
1/4 c panko crumbs
Salt and pepper
Oil, for frying

Boil eggs for 6 minutes. Remove from heat and cool completely. Peel.

Mix flour and panko together in a shallow container. Separate sausage into 4 balls. Flatten and wrap and 1 ball around 1 egg. Roll in panko and fry until golden brown on each side. Serve.

If you are worried about the meat being done you can bake it in the oven a little longer after you fry it.
