Cheese Crusted Asparagus

Cheese Crusted Asparagus
Adapted from Cooks Country

2 lbs asparagus
1 1/4 cups shredded Parmesan
1/4 c shredded asiago
3/4 c panko bread crumbs
2 large egg whites
Salt and pepper

Wash asparagus and poke holes in the spears. Set atop a paper towel. Salt. Cover with another paper towel. Let sit for half an hour.

Preheat oven to 425 F. Line a baking sheet with tinfoil and spray with oil.

Whip egg whites to sot peaks. Mix panko with cheeses and salt and pepper. One at a time coat asparagus in egg whites and then in cheese mixture.  Place side by side on being sheet.

Bake about 12 minutes.
