Spicy Acorn Squash Soup

1 acorn squash, roasted
1 jalapeño, roasted and skinned
1-2 c chicken broth

1 c roasted corn
Speck or Chorizo
Coijta Cheese

Place squash, jalapeño and 1 cup broth in blender. Add more broth as needed to reach desired thickness.

If you want additional heat add red pepper flakes or more jalapeños.

Heat in a sauce pan, add corn, cooked speck or chorizo. Serve hot.

Top with cheese, Pepita’s and chives.
