Best Damn Salmon

When I only have to feed myself I always seem to gravitate towards salmon or eggs.  Not sure why but they are easy to make and I love them.


1 fresh salmon portion
Extra Virgin Olive Oil
Pistachios, chopped
Onion Straws
Salt and Pepper
1/4 t total fresh oregano, parsley and basil
1 t green mustard seed mustard

Fresh Herbs
Salt and Pepper
Patypan Squash

Mix herbs, mustard, pistachios and salt and pepper.

Preheat stainless steel skillet on high heat. Drizzle oil in pan and place salmon in until crisp and turn. While other side is searing spread mustard mixture on top. Place in oven on Brook and cook 5-10 more minutes.

Meanwhile steam squash with herbs, salt and pepper. Serve with salmon and top with onion straws.
