Summer Squash Gratin


Sorry for the big break, we were enjoying a vacation to Yellowstone and didn’t cook much. I am back now, so let’s start with a summer recipe.

Summer Squash Gratin

2 small zucchinis
2 small yellow squash
1/2 onion, sliced thinly
2 t Fresh Rosemary
1/3 c shredded Gruyere Cheese
1/4 c Frenchs Onions
2 t Fresh Oregano
Salt and Pepper
1 t oil for onions
2 t extra virgin olive oil for zucchini

Thinly slice onions and caramelize in a saute pan with 1 t oil.

Preheat oven to 375 F. Slice zucchini and squash thinly. Drizzle with oil. Layer in two small dishes and place caramelized onions on top. Sprinkle herbs, salt and pepper, cheese, and finally Frenches onions. Bake 15-20 minutes.
