Chicago Deep Dish Pizza


When I visited Chicago I fell in love with deep dish pizza, frankly nothing here even comes close to those amazing lasagna thick slices. So I set out to recreate my own.

Chicago Pizza

1 c + 3 T flour
2 T Olive Oil
1 t salt
1 T sugar
1 1/2 t yeast
1/4 + 2 T milk

Olive Oil
1 small can crushed tomatoes
2 t garlic
1 t fresh Oregano, chopped
Salt and Pepper

Toppings, your choice
2 c part skim mozzarella, shredded

2 T Butter

Mix first 6 ingredients and let rise, until doubled… About 1 hour.

Saute olive oil and garlic until fragrant. Add tomatoes and oregano. Cook down for about 15 minutes to produce thick sauce. Salt and Pepper to taste. Set aside.

If your toppings are greasy precook in microwave and dab with papertowels. Trust me. There is so much cheese you do not want all the grease.

Preheat oven to 400 F. Take a 9 inch cake pqn and generousky grease with butter. After dough has risen, roll out and place in greased pan. Make sure the crust comes up the side. Place half the cheese in the pan. And then put toppings on. Put remainder of cheese on top and finally the sauce you made.

Bake 20-30 minutes or until cheese melts and crust is browning and crisp.
