Lemon Chicken


This dish is best BBQ’d or in tinfoil over hot coals. However, it decided to rain… So oven roasted it is.
Lemon Chicken

2 chicken breasts cut in 1 inch thick length-wise
1 lemon
1 clove minced garlic
Salt and Pepper
2 T butter (optional)

Preheat on to 375 F. You can cut the peel off the lemon, or leave it. Slice thinly.

Place chicken breasts on a cooling rack on top of a cookie sheet. Mix garlic and butter and spread on top of chicken. Top with lemon, salt and pepper.

Bake 25-30 minutes.
