Krumkake and a Farewell

My husband’s neice is headed to Norway on a Mission. What better way to celebrate than with krumkake! See you in a week or so! It’s vacation time.


Norwegian Krumkake

3 eggs
1 c sugar
7 1/2 T butter, melted
1 1/2 c flour
1 t almond extract
1/2 t ground cardamom
1 c milk

Mix butter and sugar in a stand mixer. Add eggs, milk, flour, extract and cardamom. Mix until well incorporated and batter is a light yellow.

Preheat krumkake iron on medium heat. Spray with cooking spray and spoon about 1 1/2 T of batter onto iron. Close and cook for about 30 seconds. Turn. Cook another minute or until lightly brown.

Remove from iron with a fork and either leave flat or wrap around a wood shaping tool. Cool.

For added pizzazz you could serve with ice cream, whipped cream, fresh fruit, orĀ  dipped in chocolate with sprinkles.
