4 homemade flour tortillas
1/2 c diced sweet potato
1/4 c cheese, I used mozzarella and cojta
1 t chopped jalapeño
1 t diced onion
1/2 t minced garlic
Salt and Pepper
Place sweet potato in microwave safe bowl and cover. Cook for 1-2 minutes. Spray oil in small pan and brown onion, add jalapeño and garlic and remove from heat.
Preheat a panini pan and place tortilla in pan. Crack one egg in center of tortilla. Sprinkle with half the cheese, pepper/onion mix/and sweet potatoes. Top with salt, pepper, chili powder and some cilantro.
Place second tortilla on top and place panini lid on top. Cook until egg is cooked through and tortilla is browned. Cut into wedges and top with pepitas and pico.
