It has been a while. We have been busy with work, building a chicken coop, yard work and then traveling for work. I probably have made food at home 3 times in the past month… the rest was either reheated, store bought or something easy like cereal. Yes I have been pretty bad lately. However, this pasta salad will make up for it.
Rainbow Honey Mustard Pasta Salad
1 orange bell pepper, chopped
2 c yellow grape tomatoes, quartered
2 c red grape tomatoes, quartered
1 can olives, sliced
3 c snap peas, cut into thirds
1/2 red onion, diced
3 cups pasta, cooked and drained
1/4 c honey mustard (lighthouse or Brianna’s are good)
1/2 c miracle whip
1/4 c apple cider vinegar
1 T chopped fresh Italian herbs
2 T Whole Grain Mustard
Salt and Pepper
Layer ingredients (there are a ton of options and different veggies you can use, diced ham would be a good addition or cucumbers…. but I used what looked good today). Mix sauce. You want sauce to be tangy but not super acidic. If too acidic you can add a sugar, if not tangy enough more vinegar.
Serve and enjoy.
