Charli is turning 1 on Cinco de Mayo and I will be out of town. My husband thinks I am crazy but we celebrated today.

1/4 c whole wheat flour
1/4 carrot, grated
1/4 t baking soda
1/2 an egg or in my case egg whites
2 T peanut butter

1/4 c fat free cream cheese
2 T honey

Preheat oven to 350. Mix top set of ingredients and place fill mini cupcake tins 3/4 of the way full. Bake 35-40 minutes. Cool completely.

Mix cream cheese and honey. Pipe onto pupcakes and serve.
