Mexican Egg Bake

Yes, I love eggs!


Mexican Egg Bake

4 eggs
1 medium sweet potato
Chorizo
Black beans
Cumin
Chili powder
Cayenne
Salt and Pepper
Cheese

Wrap sweet potato in plastic wrap, poke holes in it and microwave 2-3 minutes. Mash sweet potato and place in a ramekin. Add cooked chorizo and black beans. Top with seasonings and eggs. Bake on 425 for 15-20 minutes or until egg is done.
