Mexican Eggs and Sweet Potatoes

I know, my obsessionĀ  with baked eggs and sweet potatoes knows no bounds.


Mexican Eggs and Sweet Potatoes

1 large sweet potato, diced (I used purple, orange and a white one for color)
2 eggs
1/8 t cayenne
1/4 t each of cumin, pepper onion powder, and garlic powder
1/2 t salt
1/2 t cilantro

Toss sweet potatoes with some oil and all the spices. Bake at 375 F for 20 minutes. Top with egg and bake additional 10-15 minutes.
