Orange Chocolate Tart


Adventure in food, here I come. The challenge was to create a desert of of items I had using an orange.

My first thoughts were a pound cake, a chocolate tart with a hint if orange. However, the only chocolate in the house was a scant cup of dark chocolate chips, and no flour to speak of. I know, who doesn’t have flour? Turns out I used the tail end of it last week and when I went to the store space it in the Superbowl mayhem.  So with the things I had on hand this tart was created. Eggs, a little chocolate, corn flakes, sugar and some pistachios.
Orange Chocolate Tart

1 c finely ground cornflakes
1/4 c sugar
1/4 c butter, softened

Mix together and press in a 9 inch tart. Bake at 350 for 8-10 minutes. Cool.

1/3 c dark chocolate chips
1 T heavy cream

Heat in microwave in 10 second increments. Remove and stir. Repeat until chocolate is melted. Dump in tart shell and spread around. Cool.

1 c sugar
zest of 2 oranges
4 eggs
1/2 c fresh orange juice
1/4 c fresh lemon juice
2 1/2 sticks butter, at room temp

Place sugar, citrus juice and eggs in a double broiler. Heat to 180 F while stirring constantly.

Remove from heat and strain. Let cool until it reaches 140 F. In a blender add 5 cubes of butter at a time. Blend until mixture lightens and an emulsion is created. Blend an additional 1-2 minutes.  Scoop into tart shell and chill for at least 4 hours. Sprinkle pistachios or chocolate curls on top.
