Savory Breakfast Kolache


Savory Breakfast Kolaches
Adapted from Cooks Country

1 c milk, warmed
3 1/2 c flour
1/3 c sugar
2 1/4 t yeast
1 1/2 t salt
1 egg + 2 yolks
10 T melted butter

Stir egg yolks into melted butter. Place dry ingredients in stand mixer and mix. Add egg, butter mixture and yeast to bowl. Mix 8-10 minutes. Dough should still be sticky but workable. Place in oiled bowl, cover with plastic wrap and let rise 1 hour in a warm place.

Punch dough down and divide into 12 balls. Flatten balls and place filling in center. Gently fold over edges and pinch together. Turn over and place on cookie sheet. Let rise another 60-90 minutes, or until doubled. Bake at 350 F for 25 minutes. Turning half way through. Serve hot.

Fillings: meat, egg and cheese….The options are endless. Sausage, bacon, ham, meatballs, pepperoni, kielbasa, hot dogs, and just about anything else. I have given though to philly cheese steak, fajita, taco, chili dog, BBQ, pizza, chicken pesto, baked egg, and more. While these are not true to the original Czech pastry still good.

If you want to make a more authentic one check out apricot or poppy seed fillings. They are delicious.
