Pesto Butter Oysters
1/4 c pesto
4 T butter
1 t Crushed Red Pepper Flakes
1/2 t anchovy paste
Mix pesto with butter, anchovy paste and red pepper flakes. (I used half parsley walnut pesto and half mustard green cashew pesto).
Open oysters and place on the half shell. Top with pesto butter and broil on a cookie sheet for about 4 minutes. Serve with bread, which is great dipped in the sauce.
*we had both large oysters and new jersey blue. Both of us liked the smaller oysters better, but perhaps we are not oyster people.
