French Bread

BBA French Baguettes

Preferment:
3/4 + 2 T water
1/2 t yeast
3/4 t salt
2 1/4 c flour

Mix in stand mixer. Let rise for 2 hours or until doubled in size. Punch down and refrigerate 1-3 days.

Remove preferment from fridge and let come to room temp for about an hour. In stand mixer knead everything for 10 minutes. Let rise until 1 1/2 times size, about 90 minutes.

Shape into three baguettes. Let rise until 1 1/2 times size. About 45-75 minutes.

Preheat oven to 500 F. Score loaves. Place in oven (on either baguette pan or baking stone) and spray 5 times with a spray bottle. Repeat in 1 minute. Reduce heat to 450 F. Bake 10 minutes and turn. Bake 10-15 minutes more. Let cool.
