Cashew Coconut Brittle

Hot damn! I have died and gone to heaven! A few years ago my husband and I visited the most delicious candy store in Oregon.  They had some wonderful coconut cashew candy, and I have finally recreated it.


Cashew Coconut Toffee

2 c sugar
1 cube butter, softened
1/4 c dark brown sugar, packed
1/2 c sweetened condensed milk
1/2 c light corn syrup
1/2 c water
1/2 c cashews, toasted
1/2 c unsweetened coconut, toasted
1/2 t salt
2 t coconut extract

Grease a jelly roll pan and sprinkle toasted coconut and cashews on it. In a heavy bottomed pan bring the butter, sugars, corn syrup, water, and sweetened condensed milk to a simmer while continually stirring. Stir until the mixture reaches 290 F. Then remove from heat, stir in salt and extract. Pour over cashews and coconut. Let cool before breaking into peaces. Enjoy!
