4 Yukon gold potatoes
1 T extra virgin olive oil
Salt and Pepper or other seasonings
Preheat oven to 425 F. Slice potatoes into fries and blanch in hit water. Towel dry and place in a container with spices and oil. Shake gently to coat. Bake 15 minutes turn over and bake another 15-20 minutes. Run oven onto broil last 5 minutes for extra crispiness.
