Spinach Artichoke Pasta


Spinach Artichoke dip is a delicious appetizer I usually can eat for a meal. I am told it is just an appetizer so I decided to make it a meal. Add some grilled chicken and this is a hearty winter comfort food.

Spinach Artichoke Pasta

2 c uncooked pasta
1 to 1 1/2 c whole milk
1 c fontina or another Italian milder cheese such as mozzarella
1 can drained artichokes
2 c fresh spinach (1 c frozen)
1 clove garlic, minced
1 T butter
2 T flour

Cook pasta until al dente, drain. Set aside. Add 1 T butter to pan, melt and stir in 2 T flour. Add milk slowly and keep stirring. Reduce heat to low. Add garlic, spinach, and artichokes to pan. When spinach is wilted add pasta. Mixture should still be a little runny. If not add additional milk. Add in cheese and stir until melted. Serve hot with a baguette.
