Coconut Cashew Brittle


I am not a peanut fan, but I have never been able to pass up a cashew, so I revamped peanut brittle, and found a new addiction.
Coconut Cashew Brittle

1 c white sugar
1/2 cup white corn syrup
1 c cashews, lightly toasted
1/2 cup coconut, lightly toasted
dash of salt
1 T butter
1 t Coconut extract
1 t baking soda

Grease a cookie sheet and set aside. In a microwave safe bowl combine corn syrup, sugar, coconut, cashews and salt. Microwave on medium high for 6-8 minutes. Nuts should be brown and mix should be bubbly. Stir in butter and extract. Microwave another 2-3 minutes. Stir in bakind soda and quickly dump on cookie sheet. Allow to cool then break and enjoy.
