Yum! The first time I made these they did not turn out. Second time weighed the ingredients instead of measuring and they were great.
Adapted from King Arthur’s Flour
60 g Dutch processed Cocoa
25 g Hershey’s Dark Cocoa Powder
255 g Powdered Sugar
3 egg whites
1/4 t salt
1/8 t Instant Coffee
2 t vanilla
1/2 c Nestle Dark Chocolate Morsels
Preheat oven to 350 F and grease 2 cookies sheets. Mix first 7 ingredients thoroughly in a stand mixer. Stopping to scrape the sides down on occasion. Add chocolate chips and mix until incorporated. Drop 1 1/2 inch spoon fulls on the cookie sheets. Bake 8-10 minutes or until top is shiny and slightly cracked. Cool on cookie sheet.
