Potato Hot Dog Skillet


Potato Hot Dog Skillet for 2

3-4 Hot Dogs (We use good quality Beef Franks from Costco), sliced 1/2 thick
2-3 Medium Yukon Gold Potatoes, Cubed
1/2 a Yellow or White Onion
2 t Red Pepper Flakes
1/2 cup Sharp Cheddar Cheese
1 T Extra Virgin Olive Oil
Sea Salt and Fresh Ground Pepper

If I am in a hurry I place the potatoes in a microwave safe dish, with a little water. I cover it and microwave for about 5 minutes. If I am not in a hurry I will either boil them or bake them. You can also cook them on the stove top, but it takes more time.

In a medium oven-proof skillet, caramelize the onions in 1 tsp of the Extra Virgin Olive Oil. This will take about 15 minutes. Next add the hot dog slices, and cubed potatoes (that have been prepared using previous instructions). Add the rest of the oil, the red pepper flakes, and salt and pepper. Continue stirring and cooking all ingredients until the potatoes have developed a crisp outside and the hot dogs begin to brown.

Top skillet with cheese and place entire skillet into oven for about 5-10 minutes or until cheese is melted.
