1 c basil (packed)
1 clove garlic
2 T Pine nuts
1/3 c Extra Virgin Olive Oil, divided
1/4 c Romano cheese
In food processor, add basil, garlic, and pine nuts and pulse until chopped. Add in Romano. Slowly drizzle with olive oil until desired consistency is reached. Freeze in an ice cube tray what you do not use in the next part.
1/2 Chicken Breast, grilled and sliced ( I seasoned mine with Montreal Grill Mates)
1/4 c Pesto
1/4 cup shredded cheese ( I love Asiago)
1/2 lb cooked pasta
Salt and Pepper
Preheat oven to 350 F. Mix Pesto, Chicken and Pasta and place in a small baking dish. Top with cheese and bake for about 20 minutes or until cheese is melted. Enjoy!
