Corn Dip


Corn and cheese, some of my favorite things…

Spicy Corn Dip

1 c fresh corn
1 c mayonnaise
1 c mozzarella cheese
1/2 t salt
1/2 t pepper
1 jalapeño, remove veins and seeds if you want less spice
1/4 t paprika
1/4 t cumin
1/2 garlic clove, minced

Preheat oven to 350 F. Place corn in a medium skillet and toast with a little bit of olive oil. When toasted, add jalapeños and garlic and toast for another minute.

Mix all ingredients together and place in a small baking dish. Place in oven for about 15 minutes, or until cheese is melted. Garnish with cilantro and serve with chips or pretzels.
