Rock a Bye Baby Shower Cookies


Sugar Cookies

1 cup salted butter
1 ½ powdered sugar
1 egg
2 teaspoons lemon extract
3 cups all purpose flour
2 teaspoons baking powder
1 teaspoon salt

Preheat oven to 400°
Cream together butter and powdered sugar.
Mix in egg and vanilla.
Blend in flour, baking powder and salt.
Mix until the dough forms a ball.
Roll out on floured surface and cut with cookie cutter,
Bake at 400° for 7-9 minutes, until bottom of cookies are golden but tops are not
browned yet.
Cool completely before icing.

Royal Icing

From Sweet Sugar Belle

2lbs {one bag} confectioner’s sugar
1/4 c. + 2 tsp. meringue powder
1/2-3/4 c. warm water
2 tbsp. oil-free extract or flavoring (lemon!)

Add the dry ingredients first. Use your mixer’s whisk attachment to incorporate the sugar and meringue powder.

Add the extract to the water and slowly add it to the dry ingredients while mixing. At first the icing will be very liquid-like.

Continue to mix it at medium-high speed until it is fluffy and stiff peaks form, about 7-10 minutes. Mixing times are approximate, keep your eye it icing and stop mixing as soon as it becomes stiff. Over mixing and oil-containing extracts can keep the icing from setting up, so keep this in mind as you work.
