Clam Chowder, Hubbies way


Bad picture,  but the hubbie has no patience for his clam chowder. He is very specific on his likes and dislikes. Super creamy, no celery, and very little potatoes.

Hubbies Clam Chowder

2 cup chicken stock
2 pieces of bacon, fried and chopped
1/4 cup onions, caramelized in bacon fat
1 small potato, diced
1 can clams and the juice
1 T butter
2 T flour
1 t garlic
1 t balsamic vinegar
1 t Parsley
2 cups cream
Salt and Pepper

Bring potatoes to a simmer in water. Cook until almost tender. Drain. Add half the chicken stock, clams and juice, and seasonings.

Cook bacon, and saute onion. Add in garlic and cook for about 1 minute.Add to potatoes. In another pan melt butter, stir in flour and half the chicken stock to form a rue. Slowly stir in heavy cream and vinegar. Thicken. Add to potato mixture.
