British Date Night

Beef Wellington
Adapted from Gordon Ramsey

2 Sirloin steaks 1 1/2 inches thick
3 tbsp olive oil
5oz  mushrooms, finely chopped
2-4  slices prosciutto
1 sheet frozen puff pastry, thawed if frozen
1 egg
Saute mushrooms in olive oil.   Place sauted mushrooms on proscuitto.  Sear steaks on all sides, place steak on top and wrap.  Wrap with plastic and refrigerate for 1/2 an hour.
Preheat oven to 375 F.  Thaw puffed pastry, and cut in half.  Place each steak in the center of one pastry.  Wrap and cut vent holes.  Bake for about 20 minutes.  Let rest 5 minutes, and serve.
