Pumpkin Bread Pudding Bars


Pumpkin Bread Pudding

1 1/2 c. granulated sugar
1/2 c. oil
2 eggs, beaten
8 oz. fresh pumpkin puree
1 3/4 c. all-purpose flour
1/3 c. water
1 tsp. baking soda
1 tsp. salt
1 T pumpkin pie spice
1/2 cup dark chocolate chips

Preheat oven to 350 F. Mix all ingredients in a stand mixer and dump into a large loaf pan. Bake for 1 hour. Let cool.

1/2 c Caramel Sauce
1/2 c Heavy Cream
1/2 c pecans, chopped

Cut bread into one inch cubes and place in a 8 x 8 baking dish. Dump cream in, drizzle generously with caramel sauce and top with pecans. Bake 20 minutes, covered with foil. Bake additional 15-25 minutes depending on your desired crispness or not…. ratio.
