Pumpkin Bundt Cake


I love fall!  I love baking, and there is nothing tastier than baking in fall.  Fresh apples, pumpkins, peaches…. yum!

Pumpkin Cream Cheese Bundt Cake
1 Cup Applesauce (yes I used homemade)
3 Eggs
15 ounces of Pumpkin Puree (also homemade)
1 teaspoon vanilla
2 1/4 cups white sugar
2 1/2 cups all purpose flour
1 teaspoon baking soda
1 tablespoon pumpkin pie spice
1/4 teaspoon salt
1 cup chopped walnuts (optional)

Grease and flour a bundt pant. Preheat oven to 350 F.

Combine all ingredients in a stand mixer and mix for 2-3 minutes. Dump into bundt pan and bake for 1 hour or until a tooth pick comes out clean.

Let cool for 15 minutes and then gently dump out and let cool rest of the way.

Glaze with cream cheese glaze and enjoy.
