Pretzel Buns



Pretzel Buns

1 ½ cup warm water
1 package active dry yeast
2 teaspoons sugar
4-½ cups unbleached all-purpose Flour
2 teaspoons Kosher salt
4 tablespoons unsalted Butter, melted
¼ cups lye
Sea Salt

Add water, yeast and sugar and let it get foamy (about 5 minutes).  Add in flour salt and melted butter and mix in a kitchen aid for about 8-10 minutes.  Cover with a towel, and let rise for 1 hour in a warm place.

Shape dough into a round bun, or weave like you would a kaiser roll, and place on a parchment lined cookie sheet.  Let rise again for about 1/2 an hour.

Preheat oven to 425 F.

VERY IMPORTANT…. if you are using lye add your lye to COLD water in a sauce pan.  Bring pan to a simmer.  If you are worried about using lye, you can substitute baking soda.

When lye is ready carefully remove risen bun from cookie sheet and place in simmering lye water.  Poach bun for about 1 minute on each side and remove to a baking sheet.  When you have done this place in oven and bake for 15-20 minutes.  Remove from oven, and if you can’t resist sprinkle them with salt and enjoy!
