We are officially back on track. Tonight we shared some hummus (same recipe as before), and this time I made gyros. Nothing too fancy. We wanted some football food.
1 lb ground lamb
1/2 t oregano
1 Clive garlic
1 t salt
1/2 t pepper
5 slices bacon
Place lamb and herbs in a small bowl. Mix well and refrigerate overnight.
Preheat oven to 300 F. Slice onion into quarters, add to food processor, with lamb mixture, garlic clove and bacon. Process for about one minute. On a cookie sheet lined with tin foil shape into a rectangular loaf about 1 1/2 inches thick. Bake for 30 minutes.
Remove from oven and let cool. Once cooled slice into thin strips.
To serve pan fry strips and place on a pita. Top win diced red onion, tomato and cucumber. You can add hot sauce and/or cucumber yogurt sauce.
