Honestly, the name is morbid. My husband told me ‘roasted smashed potatoes’ was not inventive so this is what I came up with.
4-6 baby potatoes per mouth to feed
Bacon Grease or Olive Oil
Fresh Chives and Oregano
Boil potatoes about 40 minutes. Drain. Pat dry. Place on a cookie sheet and smash. Cool to room temp or place in the fridge for next day.
Preheat oven to 450. Drizzle olive oil over potatoes, sprinkle with salt and fresh chopped herbs. Bake 30-45 minutes, or until crispy.
