Wow! I hate huckleberries, but my husband adores them. However, we have found one way I will eat them. This recipe is divine.
Huckleberry Chocolate Ice Cream
1 recipe vanilla ice cream (I love the custard type but if in a bind you can use store bought vanilla)
1/4 cup Huckleberry Syrup (see my recipe)
1 cup dark chocolate
1/4 cup heavy whipping cream
1/4 cup roasted chopped almonds
Let ice cream soften. In a small sauce pan melt chocolate and stir in the heavy cream. Drizzle the chocolate mixture and syrup into the vanilla ice cream. Sprinkle over the nuts and with a sturdy wooden spoon mix into the ice cream. You are trying to keep some chunks together. Place in freezer and enjoy after about an hour. Goes great with some cookies.
