I guess being sick has put me into a full on grits craving. I have eaten them twice a day now for the past three days.
Cajun Shrimp and Grits
9 jumbo shrimp
1 cup uncooked grits
1 t red pepper flakes
1 cup cheddar cheese
1/2 an onion
1 clove of garlic
2 T Butter
2 cups fresh spinach
Spicy Cajun seasoning
Salt and Pepper
In a sauce pan bring 4 cups of water to boil and add in grits and red pepper flakes.
Use 1 T butter to caramelize onions. When caramelized add in spinach and garlic. Saute until you smell the garlic and set aside.
Put the spicy Cajun seasoning on your shrimp and saute in pan.
When the grits are thickened add cheddar cheese and stir. Salt and pepper, to taste.
To serve, place grits on plate. Then top with sauted veggies and the shrimp.
