The picture doesn’t do it justice. When I am sick I want grits with a fried egg. My husband calls me crazy, but I love them. Besides they are super simple.
Buttered Grits and Fried Eggs
1/4 cup grits (high quality love the yellow ones from Whole Foods)
1 cup water
1 T Butter
1/8 t red pepper flakes
Salt and Pepper
1-2 Eggs, over easy
Bring water to a boil in a sauce pan and dump in grits and red pepper flakes. Simmer until thickens. Melt in butter.
In small frying pan fry egg, over easy. Place on top of grits and pop yolk. Stir in and salt and pepper to taste.
