Homemade Huckleberry Syrup

Well it’s officially transitioning into fall. The leaves are changing, I had a fresh raspberry shake, and the huckleberries are on.

Now huckleberries are something my husband adores and I cannot stand. I love picking them and cooking afterward but they taste a lot like a blueberry and for some reason I have never been partial to the taste. I love raspberries and blackberries so often I will make the same basic syrup recipe for both.

Berry Syrup

1 cup sugar
2 cups fresh berries
1 cup water
1 t lemon juice

Add everything to a small sauce pan and heat on medium low. Stir continuously, until thickened. Remove from heat and strain if you don’t like a chunkier syrup.

Serve on waffles, pancakes, cheesecake, french toast or even ice cream.
