Summer Grilling at it’s Finest

There is nothing better after a hard day of work than enjoying a meal from the grill. Few are easier than this. Five minutes of prep time and then about an hour on the grill. No turning or obsessing over anything.

Butterflied Grilled Chicken
Adapted from Americas Test Kitchen

1 Whole Chicken
Salt and Pepper
2 cups Applewood Chips, soaked

Remove spare parts bag from chicken. Place chicken breast side down and use kitchen shears to remove backbone. Turn over and firmly press to flatten. Turn all burners on high on grill and let preheat for about fifteen minutes. Place chips in smoker box or make your own using aluminum foil and poking holes in it.

After fifteen minutes turn grill to medium low and place chicken breast side down on grill. Grill for about 45 minutes to an hour. When breast temperature reaches 160 you are good to go.

Bacon and Tomato Pasta Salad

2 cups dried pasta, cooked al dente
1 large tomato, chopped
Fresh Basil, Oregano, and Chives
3 strips Bacon, cooked and lightly chopped
1/4 cup cheese, cubed (I like mozzarella or Swiss but for more color cheddar would look great)

Sauce:
1/2 cup Miracle Whip
2 t Mustard
1 t Balsamic Vinegar
1/4 cup Apple Cider Vinegar
1/4 cup Milk
2 T Sugar
Salt and Pepper, to taste

Mix sauce and toss with pasta to coat. (I probably would have added more tomatoes and a red onion, but after a long day in the yard the last thing I wanted to do was run to the store).
